The Master’s degree has an overall duration of 1 academic year. The programme is constituted by 60 university training credits (UTC), of which 40 are for lectures, laboratory sessions and/or guided tours, 18 for training in companies in Italian or abroad, and 2 for the final dissertation.
The topics are organised into four integrated courses (more details are available in the Course synopsis):

• Nutrition and diet (8 UTC) - Coordinator Prof.ssa Simona BO 
• Supply of animal and vegetable raw materials (8 UTC) - Coordinator Prof.ssa Tiziana CIVERA
• Food technologies (12 UTC) - Coordinator Prof. Vincenzo GERBI
• Chemical composition and functional properties of raw material and foods (12 UTC) - Coordinator Prof. Carlo BICCHI
